Today I am going to be sharing a recipe on how to make roasted chickpeas.  I have added these roasted chickpeas to so many different dishes: salads, pasta, wraps, and rice bowls.  I even eat them on their own as a snack.  These chickpeas are a great way to add a plant-based protein to your meals!

The recipe itself is super easy and has very little prep time.  All you need are canned chickpeas, olive oil, and salt.  I like to add a bit of this Chipotle Aioli Mix from Epicure, but you can play around with different spices.

To start, preheat your oven to 400°F.  Open a can of chickpeas and rinse the chickpeas using a strainer.

Add the chickpeas to a mixing bowl and add the olive oil, salt, and optional seasoning.  Mix everything together so the chickpeas are covered in the oil and seasoning.

Put the chickpeas on a baking sheet and bake for 25-30 minutes, stirring halfway.

Roasted Chickpeas

Prep time: 5 - 10 minutes


Ingredients

1 can chickpeas, 398 ml
2 tsp olive oil
1/4 tsp salt, or to taste
Optional seasoning*

The Process

  1. Preheat your oven to 400°F.

  2. Open a can of chickpeas and rinse under the sink using a strainer.

  3. Transfer the chickpeas into a mixing bowl and add the olive oil, salt, and seasoning.

  4. Mix the ingredients together until the chickpeas are covered in the olive oil and seasonings.

  5. Transfer the chickpeas to a baking sheet and spread them out to ensure they all bake evenly.

  6. Bake for 25-30 minutes, stirring halfway.
